is there a way to convert the rear drum brakes to rotor brakes like the front?

You can get them of a MX3 v6 version

this sounds interesting, what es parts would you need to do the conversion? surely just not the rotors?

Probably the hubs, brackets and lines. Calipers and the stuff that goes with them (pads) too of course.

i just ordered some front cross drilled rotors, next paycheck im getting pads, then new drums for the back, but i might hold off on the new drums if i can find out more on the es, prolly just a direct bolt in swap.
