Did you replace the thermostate. I see a list of stuff that doesn't make sense. You have changed the head gasket but has the thermostate been done? all that bull**** and no mention of anything in the cooling system despite it being an overheating problem. did you bother checking the head to make sure it was straight and not cracked before putting a new gasket in? replace the water pump when you did the timing belt? there is so much here that doesn't add up. a stock ECU ain't gonna let you see 8k unless you do something stupid, and even then, the only way I can see an over-rev causing a cooling issue is if it caused the water pump to cavitate and you held it there like a moron... except this isn't an SR20, so the odds are against that.
