will it stick to upholstery? or what would you recommend for headliner and doors?

Upholstery and fabric needs to be dyed - not painted.
I'm sure you can get some good info by looking up a local upholstery shop, or even one that does convertible tops & boat tops.
I'm pretty sure SEM makes dye, also - but I've never done any of that.

my friend just spray painted his headliner and it looks pretty damn good... so i dunno if dyeing is the only option
