what if I just put fiberglass insulation or carpet foam or something between the outer skin and the inner panel? Obviously that's not going to help for rattles, but what about road noise?

yep, but don't use fiberglass. i played around with carpet foam, and it worked a lot better than dynamat to reduce road noise use some spray adheasive to attatch it to the outer skin, and it'll help a little with the rattles
